No sugar,  low fat Chocolate Brownies

Following her treatment for Breast Cancer,  Tanya has developed a real interest in healthy eating. The following recipe is one of her favourites. Our support group was lucky enough to taste them during her chat about healthy eating…..enjoy!

  •  100g unsalted butter
  • 200g dark high cocoa chocolate
  • 200g baked sweet potato flesh scooped out 125g mashed very ripe banana
  • 2 heaped teaspoons of Stevia
  • 2 medium eggs
  • 2 teaspoons of vanilla extract
  • 100g plain flour
  • 1/4 teaspoon of baking powder
  • 100g chopped pecan nuts

Line an 18cm square baking tin with non-stick paper Pre-heat oven to 180 degrees (or 160 degrees fan).

Melt butter in a pan, then add 125g of the chopped chocolate. Stir until melted.

Beat the sweet potato, Stevia and banana together in a bowl until well mixed. Add the melted butter and chocolate, then the beaten eggs and vanilla. Mix until well combined.

Stir in flour and baking powder, then fold in pecans and remaining chocolate.

Bake for 20-25 minutes. Cool completely in tin, turn out and cut
